What would be the recommended way to set up Zorro connection to an IB Gateway running on a different computer?

SET_SERVER is only in the form of ' Port Nr' (but not IP:port nr)
The Server field in the Accounts.csv is also seemingly to only specify a port, rather than the full ip:port pair.

I was actually fishing for some 'undocumented' feature already existing, or hinting at adding one...as this would be a pretty common problem, given IB's limitations on connections.

It would be neat to be able to specify IP:port in the Accounts.csv, wouldn't it?

Use a Friends and Family or Financial Advisor account to manipulate multiple IB accounts so that you don't have to use multiple gateways and purchase unnecessary duplicate market data subscriptions.
