I finally found the test function in the script editor, and it worked great for one of my projects. But now I have started something new, and pressing the "test script" button just runs my last project, even when I don't have any files related at all to that project open. What can I do?

When you press run / test script in SED you are running the file path you have specified in Options no matter what files are open. Just change the path to your new project main script file.

Alternatively press Alt + F5. That makes you current script the one that's run.
