Know that the zombie will be seen from the top, so 90 percent of the model is not seen most of the time. So in answer to both of you, the model needs to be very simple. I prefer a gray one, but I don't mind a green one really. The model needs walk and death animations, and a attack animation that looks good from above is a bonus.

The game takes place a little in the future, but still I dont care about cloths, ect, since its so zoomed out, all you see is a grey blob with arms.
And gore can be minimum, since any red dots on the skin will show as red specks, and the rest I can generate through my blood system.
