Hi!
I'm currently looking for a free model software. I found Wings 3d and Blender and now I'm thinking about which one I should choose. I will need the software for creating and skinning low poly level objects and weapons.
Which one is better, easier to learn, has a faster workflow?

Wings3d doesn't do animation.I watched someone use Wings3D and it looks very easy and very capable.
Blender takes time to learn but is very powerful. If you dare to criticize the Blender interface, people will visit you in the night and do horrible things to you (so I have heard)
Have you tried Anim8tor, its amazingly good and very well supported (and free)

Looking for an "overall 3D package" blender would be more complete.Wings is a dedicated box modeling app which has the tools required to enable a very fast workflow for box modeling.
.They go well together, learn to use them both

And what about unwrapping/skinning? Is there something like atlas mapping in one of the editors?

blender is very good at unwrapping. so good actually, that some people took blender's unwrapping code and created roadkill and its plugins for maya/3dsmax/xsi with it.

wings is much easier to learn but blender is a much better program.

To simplify your life while you are learning, just use roadkill for your uv unwrapping needs:
