How about some little action-rpg? These aren't too complex, you need neither a good AI nor good graphics if using an isometric view, and you can integrate all the fantasy stuff.
Some might say that's too big, too, but I think it's a good compromise between a really huge RPG and Pong.

Actually an RPG is much much simpler if you do it right...

There's a lot less physics to worry about, and generally in an RPG the camera code doesn't need to be as complex.

If you go tile-based in the code then you use notepad as a level editor and save all that time that would have been spend building/compiling levels or just screwing around with WED settings just to make it work.

an RPG is a big project....I've been working on Valiant Black for like 5-6 years now...one of those Duke Nukem things I guess.
