As far as I know there aren't too many fighting games made with lite-c / gamestudio, but you could have a look at the Acknex User Magazine (use the online-search), there has been a simple fighting game workshop.

EDIT: Btw you should start with the Online (Programming) Tutorial first, otherwise you will have trouble understanding every other specific tutorial.
