In A6 I could get a simple water effect by applying to a block one of the standard " water " sprites of standard.wad
Apparently it is not possible in A7
What am I missing ?

I have the same problem.
I do not know why.

For me it works on a PC and does not work on the other one.
Try to reinstall 3DGS.
I believe that it is a problem of configuration or option.

You can t set the texture or you can t see the texture?

If it s the second one, make sure the block
have 100% ambient and one light pulb.
It s working.

For the first one, try to reload your standard.wad file.

At my pc, when I used trial version of A7, I was able to set the water textures to blocks, they were visible, but werent animating (distortions) in engine. At that time I thought that it's one more (-) to trial edition.

The turbulent water effect does not work in A7 levels, only in A6 levels, I think it was abandoned for A7 levels.

Maybe, someone has written a shader that produces the same effect. I'm sort of missing it.

I installed 3DGS 6.60 or other, then I have reinstalled A7.
