Hi.

Is it possible to create a model with two different mapping channels?...

Different skins would have different mapping...The same polygon would have two different mapping coordinates for different skins... UV1 and UV2

This would allow using shaders to blend two textures at differnt sizes to avoid tiling.

That is what we do at work but I don't seem to be able to do it with GS on my own project.
