For FXCM, should Weekend be left at it's default of 2, or set to 7?

More generally, is there a known table/list of what values should be used for what variables for what brokers?

Do not change the values, unless you have a particular reason to.

When I look at the 'Hucks Trend Catcher' script it only has a positive performance when using Weekend=1.
So when you saying 'Do not change the values, unless you have a reason to.'
Would this be a reason or do you mean that it should be a technically based reason?

Yes, a better performance when weekend signals are ignored would be a reason. This can be the case for some systems. But not for the Z systems, where the default settings from the .ini file are recommended - otherwise they weren't default.
